Looks like a type of agave or "century plant" as they're called out here. I love the pattern of the torns that's pressed into the face of each fat stalk. As each new stalk peals away from the core, it emerges with this pattern.

You definitely wouldn't want to fall on one of these. They're as hard as nails! :-)
